My romaine has made wonderful "heads", if you call them that! It is now starting to bolt, but still usable. I just cut off the top couple of inches and the rest is good. Not bitter at all.

I will give them a try as mumsey said. I have my black seeded simpson assigned to seed production, so I only allow one kind of lettuce to flower at time for seed saving. So - I'd likely either pull these out or give a try.....
i did plant a few behind my sweet Cecily, so they get to be in the shade by about 2-3pm, after only getting into the sune around 10ish. those few are doing fine, and had one from that are in today's recent salad. I'm a bit not completely happy about that because those are just beginning to heart up with the sweet tender whitish leaves in the middle...so I'd like to let them get a bit more of that action before harvesting.

It is the nature of plants to make seed and reproduce. When the plant reaches a certain point of maturity it flowers. Age is a factor and also in many cases temperature or day length is a factor.
Yes, taste is the test. If it still tastes good , use it.
Oh, lettuce if washed and refrigerated keeps in the fridg quite well for a time.
Plant some more. Plant some every couple of weeks all season?
I just noticed 3 nice heads that came up volunteer out in my garden. Must have let some go to seed last year?
Have fun!

I harvested one of the midway bolters today for the luncheon salad.
I went out with a large bowl of ice water, and I harvest and then cut the leaves off into the water....I got distracted a bit with training my trombonetta squash onto the fence, and when I turned around, the pup was helping himself to the harvested lettuce!
I think it is going to taste ok, lol!
The royal taster...

the pup was helping himself to the harvested lettuce! Ha, ha , ha. That reminds me of the time I went to the garden and was harvesting some of my very first tomatoes a couple of years ago. I had them laying on the ground at the edge of the garden as I was working. I heard some slurping sounds and discovered my free ranging hens to be pecking into them and gulping down the liquid as fast as they could. Grrrr.
