Just got this from Baker Creek. It's a documentary about 6 diabetic people who go to a program that lasts 10 days and changes their food habits, with astounding results! I'll be watching it later. Of course they are selling a complete guide, etc.

This is the forks over knives concept, which has been documented by lab studies, historical documents, and studies on people, such as what you see in the Baker Creek link. I tend to lean in that direction but have not gone to a totally plant-based diet yet.

I'm primarily (maybe 85-90%) plant based but as with the rest of my life-- everything in moderation, including moderation. I may eat a quarter of a chicken breast a couple of times a month, some fish, I love to drink low fat kefir and I can't resist a thin slice of a good sharp cheddar which I buy a small amount of for our green chile enchiladas once a month. And if someone serves something I don't eat at home, I eat it with gratitude. There are so many tasty plant based alternatives now days- they've come a long way in the 40+ years I've eaten plant based. And beans, lentils and whole grains are a huge staple in my kitchen for protein.

I watched it this morning, pretty impressive. And it makes sense. I am pretty much plant-based, whole foods like desertwoman. I do enjoy salmon occasionally and about once a year bacon on a BLT! I'm never bored with eating, always finding something new or a new way to make things.

Just finished watching and while I am impressed with the results, it was more of a testimonial than a "here's what to do" guide. I did download the recipes and will definitely try a few.
I don't consume a lot of meat, but it's not absent from my diet. Hubby is eating less since the last heart attack but I'd like to decrease our consumption by at least 50%. Actually he had a black bean burger in the hospital and was impressed. I'm not sure how healthy store-bought veggie burgers are when you factor in preservatives, but I plan to experiment on my own

That is scary! In my own personal opinion, the food industry evolved into what it is today in order to provide consumers with what they want whenever they want it. As a younger version of myself, I always looked forward to 'tomato season' with the same excitement I had for Christmas or the end of school. Now I can go to the store 365 days a year to buy 'fresh' tomatoes or lettuce, which indicates the food industry has achieved its objective. Because we had to have it our way, there is no telling where it came from or what's in it. I am attempting to create my own version of what I want whenever I want it, hence my purchase of canning, dehydrating, freezing, and freeze-drying equipment. As I get better at gardening and processing, I can envision going to the store once a month or less, and having a decent selection of healthy food at my table.

about once a year bacon on a BLT! If you would like to eat more BLTs during tomato season, I make TLTs- I slice tempeh into thin slices, marinate in tamari, olive oil and a touch of maple syrup and sauté in skillet. You get that salty taste of bacon and it hits that BLT spot. I also make them with organic turkey bacon occasionally (which is what hubby uses) emmsmommy, I make my own black bean burgers- a batch of them- Freeze individually and then stack and bag. Easy to pull one out for a quick meal.

DW, you can buy tempeh presliced. Well that would make it easy! I've seen it at the store but have been too cheap to spend the extra dollar or so when I can marinate it myself. I probably need to get over that.
