I have long thought that Mustard Greens and Grilled pork chops were a perfect flavor combination.
Stewed Zucchini, tomatoes, and onions with baked chicken breasts.
Sautéed Yellow Crookneck and onions with pork and beef sausage.
Green Beans and New Potatoes and anything else.
Stewed Okra, tomatoes and onions... I don't need any meat with that.
Beets with Beets.

Couldn't possibly disagree with any of those, armjr . Yes indeed to the beans and beets. I'd add: Fresh tomatoes, basil, cheese, and a little thyme... Okra, yellow crookneck squash, green tomatoes and onion... Garlic with darn near everything (no, not ice cream)...

Baked beans with a side of small curd cottage cheese...just barely touching on the plate.

Down here we have a little pepper that grows wild called a Chili Petine (Pequine). They are hot enough to release a good dose of serotonin. They are great on fresh cut tomatoes. You just pop one in your mouth with a half slice of tomato and chew the whole thing up before you can think about it too long. The only way to make it stop burning is to eat another one. At some point you will run out of tomato and then you just have to let nature take its course. I always go back and do it again though.
The petines are really good on grilled meat. The heat from the fire tends to take some of the heat out of the pepper and all that's left is the flavor.

I love cottage cheese. #1 wife doesn't. So, I don't get much of it. May have to just start buying my own....
I like it with some fresh cracked pepper on it. Buttermilk too. A glass of buttermilk before bed and I sleep like a baby.
With that said. I don't care for yogurt. Don't know why. Although I've started putting plain yogurt on my baked potatoes instead of sour cream (which I also love).

Minced parsley and fresh garlic sautéed in olive oil, drizzle on pasta with some fresh grated romano on top. Its great as a side with a flavorful marinated chicken. armjr , if you are looking for a sour cream substitute consider giving a try with Forager (plant based) sour creme. It's not the real stuff but it's pretty darn good and I find it better takes care of my want for sour cream than yogurt. There's also a great plant based cream cheese- Kite Hill. They're both found at natural food stores like Natural Grocers, Whole Foods, etc

Fresh rosemary and garlic, with countless things. For sweets, pineapple and coconut...and maybe some rum!
