Who nurtures volunteer veggies that crop up? Do you transplant? Leave in place? Turn under?

I might move some garlic or just leave it. Occasionally a potato will crop up where it will be OK to grow. Most volunteers just get tilled under.

Depends what it is. I usually get a volunteer tomato or two, I move those to the onion and garlic patch to continue growing once the onions and garlic are done. I hate blank spaces in the garden!

I almost always have volunteer tomatoes and just leave them alone. They then tend to be the healthiest of them all.
I do the same with almost all volunteers in the yard...be it veggies or flowers... With the exception of sunflowers. My sunflowers volunteer all over every year... One extremely large headed one grew in the green beans a couple years ago... I know about growth inhibition and sunflowers...but it looked cool so I left it... I did notice less production in the surrounding bean plants.
Also have chives come up here and there...just leave them alone as well.
I also have hundreds (not an exaggeration) of dill volunteers all over... Many of which come up in the veggie garden. I glean as much as I want for the freezer, family and neighbors (it's like zucchini...sometimes you just can't get any more takers!)... Most of the rest I leave to grow and flower...great for pollinators!

If the volunteers are in a spot that 's not interfering with whatever else you planted, I would leave it. But if it is, I would either pull it or cut it if it would disrupt the roots...then I would put a stone or patio tile over it so it doesn't come back.

my answer is also: 'it depends' if came out of the compost pile, I wont keep it, some of my compost comes from other people, and they throw their storebought stuff in the compost, who knows what it is.
now that my garden is on year 4, I have a lot more volunteers for a wide variety of reason, so most get pulled. if I can identify it and want it, i'll uproot and move it.
I have to tell ya, I'm sooo incredibly bummed we got bug eggs from the CG compost pile last year - if my suspicions are correct, I will now, never get rid of them - where as prior to that, my garden was pristine - so sad. (I could not direct seed anything, for the bugs ate the babies)

I don't keep volunteers and pretty much treat them as weeds. Squash or cukes do a lot of cross breeding and I don't want them because I don't know how they will turn out. Tomatoes or potatoes can carry Late Blight spores and I don't want them either.
I also pull asparagus volunteers in the asparagus patch. My asparagus is a hybrid and volunteers will not breed true and they would also crowd the asparagus patch.

Mostly tomatoes, chives and tomatillos for veggies. On the flora side I currently have marigold, Mexican marigold, calendula and sunflowers. I nurture most if I can find space.

Sometimes I just let vol pumpkins or winter squash just grow..to see what mutants develop. I leave tortillios, some tomatoes IF it's a variety that I didn't grow this year..I love when dill scatters because it brings in all these great pollinators. I don't keep string beans because I also plant other pea flowers and the vol would not be edible.

I should probably clarify. I let FLOWER volunteers grow wherever they want to and I also let the dill re-seed.

I am giving up on volunteers this year. I used to work around them all the time, another contributing factor to my weed fields.....This year, only intentional planting, and mulch elsewhere.
