Since joining this forum, or rather the old one, I have challenged myself to try something new each year.
For me this year it is egg plant... not sure even how to cook it!

I am growing eggplant for the first time this year also. I am growing the long, skinny Asian kind and I have the best recipe for ratatouille which I can share if you like. Before that I had only ever had eggplant parmesan or fried eggplant but ratatouille is so much better tasting and better for you too.
The other thing that I am growing for the first time is artichokes and I may take some pics tomorrow. I started them from seed way back in February and planted them outside on April 17 and they are just now starting to put on some growth.

I'm growing tomatillos for the first time, from seed veggiegal sent me. I try to grow something new each year too. though that's what gets me into trouble. Because if I like it then I want to grow it every year and that's how my garden expands.
At this house, it's suppose to be where I scale back my gardens. Not stop gardening, just rein in the size a bit. That's not working so well. Over the past 3 years I've increased the veggie garden by 50% and the flower gardens are a bit expanded too. I had what I was calling "the fallow field" where I could toss branches and odds and ends garden debris. There's about 1/4 of that field left unplanted now
BR- artichokes is on my garden bucket list!

I'm not doing anything new this year but Dahlias from seed. (unwin dwarf). I am trying some different varieties of stuff I usually grow, but .................. I'm waiting on this dahlia bud to open: I have 20 out there.

I am doing sunflowers for the first time from seed and several different flowers from transplants. I put a peach tree in my backyard and a small red rhododendron in front of my house.

I had to think hard about this, as I thought that everything new was just new varieties. Then I remembered two "cucumbers" I have planted that are new - W Indian Gherkin, and Barese, which is actually a melon, but used like a cucumber when immature. I tried these because of the problem I have with bacterial wilt, which limits me to county fair (which is not a bad cuke).
Everything else new is a new variety, to compare to the old favorites - 16 peppers, 10 tomatoes, 6 eggplants, 3 okras, 3 pole beans, 1 kohlrabi, 2 winter squash, and 1 canteloupe. And, though I am not a vegetarian, it may not seem that way to others, once all of these things start producing! LOL

I'm growing Habanero peppers for the first time. I only kept 2 plants out of 6 that germinated. I gave the rest away. Next year I have to really think about this and grow something I've never grown before.

Several types of peppers both sweet and hot, one new type of zucchini. Everything else is our ole standbys. Oh and two unidentified duke plants and one unidentified yellow squash plant that my younger uncle gave my Dad. Of course all 3 plants were supposed to be yellow squash.

Red Russian Kale for me. Have never grown any kind of kale before. And celery, found 4 pack cheap, thought what the heck, I'll tuck one here and there and see what happens.

New this year are sweet potatoes and cherry tomatoes, so far. Seeded dill and epazote, but haven't seen evidence of them yet.

Physalis or Ground cherries. Only one plant but its about 2ft tall so far and has a few flowers already.
