So it seemed to focus on root crops, but now is moving to above ground crops, or at least sampling the peas? I assume the damage is more extensive? That might be to feed its little ones? Do you have anything over the tops of the fence to block climbers?
I found a few links that might be helpful:
1. www.canr.msu.edu/news/identifying_critter_damage_in_the_garden_and_landscape
The information itself isn't that appropriate for your situation, but I shared the link so that you might want to search for a Georgia extension facility which offers comparable analysis. Apparently you can submit photos. I once contacted our Michigan extension b/c of some strange insects I found on basketry.
I wonder if a call to a GA extension office might reveal that others in your area have had similar problems? If so, there may already be an identification of these mysterious munchers.

There are a lot of bite marks (sometimes hard to define) on this site. Ishared this FYI, but I'm not sure I could correctly identify by a bite marks.
3. www.pestdetective.org.nz/clues/other-clues/bite-marks/
Some of these aren't appropriate b/c of their size, but others may be candidates, even though this is a NZ site. They have some of the same critters that we do!
4. ag.umass.edu/sites/ag.umass.edu/files/fact-sheets/pdf/whats_eating_my_vegetables.pdf
See the section "damage by wildlife" on page 3.
binnylou 's questions are very relevant; I think that's a good focus for analysis.
Are there any gardening clubs, or groups of crop growers, maybe a 4-H club...i.e., other groups that might have experienced similar attacks on their crops?
