Well, that's just one of the many Thai dishes it is used in. Besides Thai foods, Vietnamese, Malaysian, Indonesian, and pretty much all SE Asian cuisines use it. It is also found in some Indian foods, mostly in east and NE cooking, but it's the SE Asian foods I use it most in.

It's also added to herbal tea blends. One of my favorite commercial blends is Lemon Ginger (a couple of companies make it) which includes lemon grass and hibiscus. I also make my own blends from my jars of individual bulk herbs, as the spirit moves me. It has some wonderful healing properties.
