ecsoehng , I've already thought to make some adjustment to allow for the wetness -- which was my main concern. I'll line the container with dry straw, place a layer of potatoes, layer straw again, etc. till I get to almost the top. Then check for moisiture every week or 10 days.
I like your idea about a bucket of soil in garage, but not sure that's practical for me for various reasons, but I'm going to think about it and see if I can test it anyway. Folks years ago around here had outside root cellars, but that's not possible for me at this time.
I store potatoes right where they grow until the ground freezes. They don't taste as delicious after that of course. So I just need a few to tide me over until spring.

Perhaps, but if you get temperatures down close to zero or below the garage will freeze too unless you have a heater in it.

Hey James, Fortunately for me temperatures don’t often get to zero or below in our area. (Yeh!!) So hopefully the trend will continue and I won’t have trouble with a “test” bucket in the garage freezing. I’ve known folks who preserve potatoes by canning but I’m spoiled and enjoy only the fresh ones. I guess if I lived in an area that winter temperatures were zero and below regularly, I’d have rethink canning potatoes. Theresa

My Dad owned a farm. He kept milk cows and a few horses and some chickens. Occasionally a pig or a lamb. He always grew a garden for corn, beans, onions, squash and potatoes. Once a year he would kill a beef. It went to the freezer. So we had meat, milk, eggs potatoes, corn, beans, carrots and onions. Mother would bottle some of the veggies. We did not eat fancy, but we never went hungry. We did not eat horse. They were for pulling farm machinery and wagons. Oh, potatoes went in the pit. Ya, I did see Mother bottle some potatoes, but generally they were used fresh from the pit. Bake em in the oven, slice em up and fry them, boil them either whole or peeled and cut up. You see they can be cooked and served a variety of ways so they don't become boring.

We had an electric one that cranked itself, but you still had to put in the ice and salt, Also needed to keep an eye on it to turn off when finished. Best ice cream we ever made was totally from the cream that rose in the fresh milk we got from a farm. Was so rich you could only eat a few spoonfuls, but that was plenty enough.

Yes. Dad used to make it in winter and would use snow instead of ice. We all got a turn at hand cranking. So we grew up thinking you had to use snow and could only make it in the winter! Best ice cream ever and we had cows for the cream.

James Thank you. I didn't even notice how many posts I've had. Probably went up because I am working at home on the computer all day. Got to take a break once in a while, and what better place than here. Just wonder what will happen when I retire. Probably annoy everyone here.
