tom ๐, my grandmother used to make an Armenian dish with eggplant and green peppers. I'll search for a recipe if you're interested. I don't care for eggplant, so I didn't have any of her creations, but she was an excellent cook. Its healing properties are new to me, but I'll get a small eggplant and give it a try.

It is widely used as a treatment for skin cancers. I am definitely buying an organic eggplant (I don't grow them) tomorrow, making the tincture and giving this a go! I have had far too many basal cell cancers and pre cancers are forming as I speak. Watermelon for blood pressure worked amazingly well so how can I not give this a try? Thanks Tom!

tom ๐, Very interesting! Eggplant Parmesan can be frozen. That's how I use most of my extras. Sure tastes good in the dead of winter. I have tried freezing the fried version, it just wasn't very good. But the sauce keeps it very well in the freezer.

I have tried freezing the fried version, it just wasn't very good. I plan to try freezing a little after blanching it in a steamer.

I plan to make several quarts of the eggplant vinegar so I can have it when eggplant is out of season.

Provided one has a fresh eggplant at hand, I think eggplant juice would be more effective than eggplant powder or vinegar.

tom ๐, I don't really have any edible or cosmetic experience with eggplants. I never cared for them, but bought them for my grandmother b/c she was housebound and couldn't get out to shop for herself. Have you ever read Herb Quarterly? It has a lot of suggestions for various organic remedies.

I never cared for them Eggplant is not a traditional vegetable for many Americans, and they do not know how to use them to make a tasty dish. I have given up on trying to give them away to my neighbors. Years ago I was given a subscription to the Herb Quarterly, but I did not used the information in it and so did not renew the subscription.

I don't think of anything non-food to do with all that eggplant I grow, so I dry much of it in cubes. I also noticed the post by tom ๐, referring to EP flour, and that is something else I do - grind it into flour! I add it into flatbreads, and once to pasta.
