I had a green eggplant from Black Beauty last year and sowed seed from it today. I wondered if green eggplant was unusual, and it's not. It's an established variety in Japan: "In the city of Yachiyo in the Chiba prefecture, adjacent to Saitama prefecture, the Green eggplant is the mascot for an elementary school because of its cultural and economic significance."

tom π, do you expect the saved seeds to be stable and produce green eggplants, or will it probably revert to black/purple?

I once found a butternut squash of superior flavor, but all the seed in it were sterile, that is, would not germinate. Sometimes plants from a mutation will be dwarfed. So, it's just a matter of trying and seeing what happens. Anyway, the large number of green eggplant varieties suggests that the trait is advantageous.

if you get fruit, keep good records. My record keeping is writing planting dates and exceptional morning lows on the calendar. It helps me plan my gardening.

Eggplant started on 3-15 started sprouting yesterday. The Rosa Bianca and Florida Market are slow, I remember germination wasn't so great last year for those 2. Time to pitch those seeds. Black Beauty and Rosita are the ones sprouting.

binnylou, Not the plants. Our market doesn't start til middle of June. I'll sell extras on facebook for sale group and to previous customers. I'm not selling as many plants this year. I told Dad we are doing more fishing. So he's been pulling my chain, said he's looking for a boat and motor.......we have a perfectly good john boat with a tiny leak and a trolling motor, though I prefer just using oars. Silly man. I potted up 30 of the various eggplant this morning.

Having experimented, I believe the flavor of cooked eggplant improves if it is permitted to cool before serving.
