This changes the ratio of omega 3 to omega 6 in their diets, which is manifested as Omega 3 deficiency. This precipitates health problems, as also occur in in humans. Almond and eucalyptus appear to be the main culprits. Eucalyptus is invasive, yet planted in many landscapes today. If the link with colony collapse is found to hold, then there might be a way to stop it.

Why is it they change their diet? I do wonder if sometimes bees can "sense" chemicals in crops and steer away from some things.

They don't "change" their diet. Bees eat from what is around them. If it is a monoculture crop being grown in the area, the bees won't get the balanced diet which comes with variety.
