These are not medium zucs. That doesn't matter if you are going to dice it up. Just remove the seeds. I use a melon baller and it works really well to scrape out the seeds but a spoon works OK too. The flesh does not get tough or bitter no matter how big the zuc gets, you just have bigger seeds.

I had a request from a friend to let some zukes get BIG for stuffing purposes, I'll cut them in the morning and give them to her at work, and stand back while she squeals with delight.

one time I cut zucchini into "coins" or bite sized pieces cross ways and stuffed with meat spaghetti sauce, topped with parm and baked - they went quick at a potluck.
I bet this big baby you could practically treat like: "stuff bell peppers" cut cross ways and stuff - be sure to leave a bottom when you scoop out the seeds of each cross wize cut....
I've had a couple of those big ol babbies already! sheesh
one of my friends said with excitement: "oh ! these are great for grilling!" and snatched it up
